Omelet Muffins

I've been making these for months for my husband to take to work. He eats them for breakfast quite often and is a big fan. I think these are the most versatile breakfast foods out there. You can literally add anything you want and they'll be amazing! 
The recipe below will be for veggie omelet muffin. I have done some with different veggies, crumbled bacon, turkey sausage or ham chunks and, as always, adding cheese makes them even better! 


Ingredients:
6 eggs
5 egg whites
2 Tbs water
1/4 C scallions, chopped
1 C spinach, chopped
1/2 C mushrooms, chopped
1 tomato, chopped

Mix all ingredients together. Divide evenly into greased muffin tin (12). Bake at 350 degrees for 25-30 minutes. 

These are SO tasty! We freeze them, then pop them into the microwave for 30-45 seconds and they are good to go! 



Yields: 6 Servings
2 muffins = 186 calories*

*When adding different veggies, meats or cheeses be sure to adjust calorie count
