Cauliflower Rice

FINALLY, healthy rice!!

Now don't read the title and think this is anything like rice. It's not. The first time I made it, I was super duper disappointed. Basically, it's a loose interpretation of rice. It's spanish flavored, it's a little close to the same size and it compliments mexican style food well.



But it's freaking delicious. I meant to take a better photo, but we ate it so fast that this is all that was left (before my plate of seconds!)

We had taco salad. Ground turkey with taco seasoning and pinto beans, atop a bed of chopped romaine, cauliflower rice, cheese, salsa and avocado. It was yummy. That's just one idea. But here's how to make it.

-If you don't have a food processor, you can stop here. I don't even know how you'd go about make it without one

Cauliflower Rice:
1 head raw cauliflower
1 Tbs paprika
1 Tbs cumin
1 tsp salt
1 tsp pepper
1 avocado, diced

I use the shredder on my processor to chop the cauliflower. You can also use your chopping blade, it just takes a little more time (ie, patience.) Chop/shred it all and it'll come out in small pieces (see attached photo).
Add all other ingredients. Mix a little longer (30 seconds or so) then empty into a bowl, stir and serve.

If you prefer it heated, you can put it in the microwave for a couple minutes. Place a cup or dish with water in it into the microwave when doing so.
