Sausage & Veggie Casserole

I've been doing a lot of meal prepping lately. I make egg muffins almost weekly and this just seemed much easier. I was able to bake it all together, then just slice pieces out (more like a quiche) and not have to worry about washing a nasty muffin pan! 


Ingredients: 
2-1/2 Cups Crumbled Turkey Sausage (one bag of Jimmy Dean's)
1 Cup sliced mushrooms
1/2 Cup chopped scallions
2 Cups chopped spinach
6 large eggs
6 large egg whites
6 large tomato slices (1 tomato)
Spray oil (Pam)
Salt and Pepper, to taste


Preheat oven to 350°. Grease 8x8 glass baking dish. Layer in sausage followed by all vegetables (except the tomato slices.) Whisk egg whites and eggs together (add your splash of water or milk if you desire.) Salt and pepper, to taste. Pour egg mixture over veggies and sausage. Bake for 30-45min, until eggs are firm. 


EAT!

*For meal prep, I sliced into 6 servings and stored them in the refrigerator until use. They reheat really well!
