Broccoli Frittata

I made this amazing Broccoli Frittata for supper tonight. At only 220 calories per serving, you'll probably want/need to add a side dish. I had turkey smoked sausage, but I think a great big garden salad with be the perfect choice.




Broccoli Frittata

Ingredients:
2 tbsp olive oil
2 garlic cloves, sliced thinly
1/4 pound fresh broccoli, chopped
2 tbsp water
5 eggs, 2 egg whites divided
1 tsp red pepper flakes, optional
1 tsp salt
1/2 tsp ground black pepper
1 tsp Italian seasoning
3 tbsp grated parmesan cheese, divided
1/3 cup shredded mild cheddar cheese

Preheat oven to 350F. Heat olive oil in oven-safe 8-10 inch skillet over medium heat. Add garlic and cook for about 1 minute. Add chopped broccoli. Stir. Add water, cover pan and cook for 2-3 minutes. Meanwhile, beat the 2 egg whites until light and fluffy. Whisk the 2 egg yolks and 3 whole eggs with seasonings and 2 tbsp parmesan cheese. Fold in egg whites. Uncover pan and pour egg mixture over broccoli. When edges are set, sprinkle top with remaining tbsp of parmesan and the shredded cheddar. Place pan in oven and bake for 10-12 minutes or until middle is set. Let sit for 5 minutes before serving.
